Humidity Solutions provides salami fermentation solution

Humidity Solutions has delivered a bespoke solution to the Chiltern Charcuterie in Buckinghamshire to provide humidification for salami fermentation.

Chiltern Charcuterie is a leading artisan producer, with award-winning salamis and air-dried charcuterie, butchering, curing, smoking and air-drying its own products using locally sourced meat. 

The chosen solution uses an ElectroVap CMC compact steam humidifier serving the 12m3 sealed fermentation room, with precise humidity control to maintain the necessary conditions for quality and consistency. The ElectroVap provides up to 1kg/h of steam to maintain 85 percent relative humidity at 25 degrees Celsius.

Chiltern Charcuterie owner John Miller approached Humidity Solutions because of the company’s experience in designing tailored humidity control solutions.

He said: “Humidity Solutions took the time to fully understand our requirements and propose the best solution, delivering the equipment within a few days. We are very pleased with the system and the service we received.”
